Chef Johnny Curiel has already established himself as an adept of contemporary Mexican cuisine, but at this rarefied workshop, his aims are more ambitious still.
At its heart is an 18-course tasting menu designed to showcase the ingredients and techniques that define Mexico’s culinary heritage—first and foremost being corn and the nixtamalization process that turns it into masa.
Instead, it’s a highly entertaining, educational, and overwhelmingly delicious dinner party that only eight people can attend at any one time, with just two seatings available a night.
